A delicious yogurt curry
Serves 2
Ingredient
2 chicken breasts (chopped into big chunks)
200g fat free natural yogurt
2tsp cumin
2 tsp ground coriander
1/2 tsp mild chili powder
2tbsp chopped coriander
6 cardamom pods
5 cloves
1 cinnamon stick
2 bay leaves
basmati rice
Method
- Place the yogurt, cumin, ground coriander, chili powder and chopped coriander in a bowl and mix together.
- Spray a pan with low calorie cooking spray and place over a high heat.
- Add the cardamom pods, cloves and bay leaves into the pan and cook for 2 minutes.
- Add the chicken and brown on both sides, pour over the yogurt mix, cover and cook for 20-25 minutes.
- Cook the rice as instructed.
- Uncover the chicken and allow to cook for another 5 minutes until the sauce thickens.
- Serve with the rice and some chopped coriander.
