Vegetarian potato pizzas

Perfect for lunch if you have time to spare.

 (Use the cheese as a HexA, otherwise make sure you syn it.)


Ingredients
2 x small jacket potatoes
3tbsp passata
40g reduced fat cheese
 I used peppers and sweetcorn but you can use any vegetables you want.

Method
  1. Preheat your oven to Gas Mark 6 (400F/200C).
  2. Cook your potatoes until done, I put mine in the microwave for 5 minutes but you can oven cook if you want.
  3. Slice your potatoes in half and place on a baking tray.
  4. Spread the passata over the potatoes, then add your vegetables and top with the cheese. 
  5. Place in the oven for 5 minutes until the cheese is melted.
  6. Remove and serve straight away.
