Salt 'n' pepper chicken

Did someone order takeout?


Serves 2
1 Syn per serving (unless using the bread as a healthy extra)

Ingredients

2 frozen chicken breasts, thawed
2tsp coarse ground black pepper
2 slices of wholemeal bread (small loaf)
1 egg, beaten
salt
2 baking potatoes
baked beans
seasoning

Method

  1. Preheat the oven to Gas mark 6 (400F/200C).
  2. Cut each chicken breast into thick strips. 
  3. In a bowl mix together your breadcrumbs, pepper, salt and seasoning. Dip each chicken strip into the beaten egg and then directly into the breadcrumb mix coating evenly. Place on an oven tray. Allow to chill for 10 minutes.
  4. Meanwhile cut your potatoes into wedges and arrange on a baking tray sprayed with fry light, season to your liking and place in the oven on the top shelf for 10 minutes. 
  5. Place the chicken strips into the the oven on the middle shelf and bake for another 15 minutes until golden. 
  6. Cook the beans as instructed.
  7. Serve the chicken, potatoes and beans and enjoy!
