Falafels and tzatziki dip

Perfect for parties and sharing.


Ingredients
(Makes 12)

Falafels
 2 x 400g can chickpeas
juice of a lemon
1/2 tsp cumin
coriander
1 garlic clove
3 spring onions
1 egg

Tzatziki dip
200g Fromage frais
1/3 cucumber
1 garlic clove

Method
  1. Add your chickpeas, lemon, cumin, coriander, garlic, spring onions and egg to a food processor and blitz until it forms a paste.
  2. Shape into 12 falafels and place on a tray in the fridge for 15 minutes.
  3. Preheat your oven to gas mark 6 (200C/400F).
  4. Once chilled place your falafels onto a baking tray and place in the centre of the oven for 20 minutes. 
  5. While baking start making your tzatziki dip. 
  6. Chop up the cucumber really small and add to your fromage frais along with the garlic, mixing well. 
  7. The falafels should be done when they are still a little soft, to long in the oven and they become crumbly and they fall apart. 
  8. Remove the falafels from the oven and serve with your dip.
