Lemon and strawberry summer roulade

A taste of summer
 
 6 Syns for the entire cake!
 
Ingredients
Cake
3 eggs
1/2 tsp vanilla essence
7 tbsp artificial sweetener
2 tbsp flour
1tbsp boiling water
 
Filling
200g quark
1/2 lemon zest
1 tbsp sweetener
strawberries
 
Method
  1. Preheat the oven to gas mark 6 (400F/200C), line a 8" square tin with baking paper.
  2. Put the eggs, sweetener and vanilla essence into a bowl and whisk until it thickens. 
  3. Fold in the flour and boiling water.
  4. Pour into your cake tin and bake in the middle of your oven for 8 - 10 minutes. 
  5. Remove and turn out onto baking paper, allow to cool. 
  6. To make up your filling mix together your quark, sweetener and lemon zest and spread onto your cake leaving a small gab at the edges. 
  7. Chop up some strawberries very small and sprinkle over your cake. 
  8. Roll your cake and decorate with some of your quark mixture and some strawberries.
